Summer Kale Citrus Salad

 Nothing says summer like a fresh citrus salad! This fit food bowl is incredibly fresh and full of healthy ingredients that will leave you feeling satisfied and nourished. First thing's first. You'll need fresh ingredients:

Citrus Vinaigrette ingredients

Directions:
In a small bowl, whisk together orange juice, lemon juice, and minced garlic.
Stream in oils while whisking.
Then, season with sea salt and cracked pepper.
 If you like a little more sweetness, add a drizzle of honey.

Now it's time to prep your salad ingredients and prepare your meal!

Directions:
Clean the kale leaves really well and chop into small bite size pieces.
Place in a bowl and set aside.
Next, segment orange by trimming down the peel, exposing the orange flesh, and then cutting into wedges.

Toast pine nuts in a dry pan on medium heat until golden and fragrant.

Slice avocado and shave Manchego.

Toss kale with vinaigrette and then start assembling salad.

Top with oranges, pine nuts, Manchego, and currants.
