We met with Aubrey Niccoli and she showed us an amazing alternative to Avocado toast with replacing the bread with sweet potatoes!
This is a great alternative if you are gluten free!
Avocado Sweet Potato Toast
2 sweet potatoes
3 tbsp. Hemp seed
Sprinkle Red pepper flakes
Preheat oven to 375 degrees.
Thinly slice sweet potatoes on a mandolin.
Place on a baking sheet with a wire cooling rack.
Drizzle avocado oil over top of sweet potatoes.
Sprinkle each one with a bit of salt.
Roast for 30 minutes and cool.
Top with mashed avocado, sprinkle of lime, sea salt, red pepper flake and hemp seeds.
