It’s back to school time, for kids and adults alike! You know what that means: constantly fighting between school lunches ($$) or making lunches to take from home. Today we’re coming at ya with 10 simple back-to-school lunch ideas that won’t break the bank while mixing things up! Best of all, they're healthy options that will help both you and your kids feel energized and ready to conquer the world! Let’s dive into these 5 fresh ideas!
1. Veggie Pinwheels + Tomato and Mozzarella Skewers
Take a tortilla and spread hummus on one side. Cover the tortilla/hummus with spinach leaves. Slice red peppers & olives and line them from left to right in the center of your tortilla. Roll up the tortilla from the bottom. Cut it into small pinwheels. Serve with mini tomatoes & mozzarella balls on a toothpick as a side.
2. Meat + Cheese Lunchable
Place 8+ crackers in the largest square. Cut up enough cheese and meat for every cracker and place them into the same and/or different squares. Include a small treat or desert in the last square.
3. Chips + Guacamole + Veggies + Fruit
Throw in a handful of chips with a to-go guacamole cup. Cut up red and yellow bell peppers as a side, as well as orange slices.
4. Asparagus Wrapped in Prosciutto
Roast asparagus for about 8-10 minutes prior to wrapping them in prosciutto. Serve on a handful of mini tomatoes. Serve with apples and dark chocolate on the side. Gourmet right?
5. Pizza Lunchable
Pack a few mini pitas or crackers for the crust. Then, throw in a mini tupperware of pizza sauce with a spoon to spread. And we’ve saved the best for last -- toppings! Pepperoni, sausage, green peppers, tomatoes, mushrooms, spinach, you name it! This can be warmed in the microwave or served cold.
